Celery seed has traditionally been used to assist in the relief of
symptoms of gout, arthritis and rheumatism. Celery has been found to
have anti-inflammatory and analgesic activity, as well as significant
diuretic properties.
Gout is a type of arthritis caused by
an increased concentration of uric acid. Uric acid is the end product
of purine metabolism. Foods high in purines therefore contribute to the
body's production of uric acid. These foods include organ meats (eg.
liver, kidneys, brains, heart, lambs fry), prawns, lobster, oysters,
salami, pate, sardines and anchovies.
When uric acid
crystals are deposited in joints, tendons, kidneys and other tissues
they cause inflammation and damage. Celery seed can increase the
elimination of uric acid from the kidneys.
From a
traditional naturopathic perspective accumulation of waste substances
in the body can contribute to arthritis and rheumatism. Celery
stimulates the enzyme glutathione-S-transferase which helps clear
accumulated toxic substances from the body.
